What’s For Dinner: Avocado Buttered Toast and Leftover Chicken

This evening I partnered leftover baked chicken that was marinaded in a can of tomato sauce, can of  herb tomato chunks and spices with avocado buttered toast.

This past super bowl Sunday my local Publix had hass avocado on special for Buy 1 Get 1 free and I bought eight! This week I have been in avocado heaven. Since I decided to just warm leftover chicken in the oven I kept it simple by toasting some sourdough bread alongside the foil wrapped chicken. I then spread the ripe avocado on the freshly toasted bread and cracked peppercorn medley and a tiny bit of sea salt on top. It was delish to say the least.

Avocados, due to their mono and polyunsaturated fat content, are a great substitution for foods rich in saturated fat. Avocados also contribute nearly 20 vitamins, minerals and beneficial plant compounds that can contribute to the nutrient quality of your diet.”
